Date, Cacao & Puffed Quinoa Bites
These date, cacao & puffed quinoa bites are really easy to make and taste delicious!
I’m a big fan of no-bake snacks, that are quick to prepare.
We’ve been ‘obsessed’ with these for a few months now, that’s why I simply have to share this recipe with you. 🙂
What I really love about these date, cacao & puffed quinoa bites is that they don’t contain any additional sugar.
Puffed quinoa adds a slightly crispy texture, naturally sweet dates for sweetness, and cocoa butter + 100 % cacao powder for that amazing chocolate flavor!
Ingredients:
- 100 g pitted dates
- 2 tbsp 100% cacao powder
- 75 g cocoa butter
- 40 g quinoa puffs
- 2 tbsp water (if using dried dates)
Directions:
Mix together pitted dates and 1 tbsp cacao powder. If you’re using dried dates, make sure to also add 2 tablespoons of water to the mixer. Mix until the mixture reaches a creamy consistency.
Melt the cocoa butter. Place the mixture into a medium size bowl, add melted cocoa butter and stir in 1 tbsp cacao powder. Then add the date mixture and stir again.
Slowly start adding puffed quinoa and stir it into the mixture until quinoa is evenly distributed.
{You can place the mixture into the fridge for a few minutes to slightly harden. This will prevent the melted cacao butter from dripping a bit to the bottom while hardening. It doesn’t bother me, so I usually skip it. Be careful not to leave it in the fridge for too long or it will harden too much.}
Take spoonfuls of this mixture and place on a lined baking sheet or a silicone mat.
Place in the fridge for 30-60 minutes to harden. Store in the fridge for up to a few days. Enjoy!
