Quickly prepared chocolate covered date and coconut truffles aren’t just amazingly tasteful but a great choice if you want to eat something sweet without indulging into refined sugars. This recipe contains only natural sugars in dates and a bit of maple syrup for the coating.
Dates are packed with energy, fiber, minerals and different vitamins and have a perfectly sweet flavor.
I’m sure you’re going to love these truffles just as much as we do. They quickly became one of our favorite sweet snacks!
INGREDIENTS (serves 6 larger truffles):
- 16 pitted dates
- 90 g coconut butter
- 40 g coconut flour
COATING (same as for our Chocolate Covered Coconut Bars):
- 60 ml coconut oil or cacao butter (melted)
- 5 tsp 100 % cacao powder
- 1-2 tbsp maple syrup
Add pitted dates and coconut flour to the food processor and blend. Then add coconut butter and blend again until a sticky batter is formed.
Form the balls with your hands and place the truffles in the refrigerator for about 10 minutes.
Add melted coconut butter, cacao powder and maple syrup into a separate bowl and mix the ingredients with a spoon. Coat each ball twice. Place in the refrigerator to set for at least 30 minutes before serving. Enjoy!
