You can prepare these yummy chocolate covered coconut bars in no time and they taste a lot like the well known Bounty bars. At the same time, if you want a healthy desert and don’t consume dairy, eggs or nuts, you can enjoy them as well.
They’re absolutely delicious, filled with healthy ingredients and they don’t contain refined sugar. My daughter loves them and calls them her “little coconut cakes.” 😉
INGREDIENTS (for 5 medium sized bars):
- 90 g coconut flour
- 40 ml coconut oil
- 3 tablespoons maple syrup
- 2 tablespoons water
- 60 ml coconut oil or cocoa butter
- 5 teaspoons 100 % cacao powder
- 1-2 tablespoons maple syrup
Filling: First mix all the ingredients in a large bowl,
then form 5 bars on a silicon baking mat (use your fingers to gently press them to the mat, so they will keep their shape). Place the bars in a freezer for 20-30 minutes or until they harden.
Chocolate coating: Place coconut oil or cocoa butter in a double boiler (medium heat) and wait until it melts. Add cacao powder and sweeten it with maple syrup. Take the bars out of the freezer and gently dip them in the liquid chocolate. Use a spoon to turn it around so each is equally covered on all sides.
Carefully take the bar out of the chocolate, place it back on the mat and wait until it hardens. Dip each bar twice.
Put the chocolate covered coconut bars back in the freezer for up to 1 hour and serve or store the bars in the refrigerator up to a few days. Enjoy!
